2 1/2 - 3 lbs. goat meat cut into 1/2 inch cubes
Marinate meat in Ziploc bag refrigerated for at least 30 minutes.
2 1/2 cups water
1 1/2 tsp. black pepper
2 tsp. chili powder
4 T. olive oil
1 T. salt
1 tsp. garlic powder
1/2 tsp. cumin
While meat is marinating, place the following on a foil-covered baking sheet:
1 1/2 lb. fresh tomatillos cut in half
2 poblano peppers, cut into quarters
Large onion cut in quarters
4 cloves peeled garlic
Roast in 350 oven until tomatillos are soft. Blend with 1/2 tsp. salt, 1/4 tsp. pepper, 1/4 tsp. oregano to make chili sauce.
Remove meat and discard marinate. Roll meat cubes in flour with a little salt and pepper; pan fry until it is golden.
Combine meat and chili sauce, and let simmer together in 350 oven. Serve hot with corn tortillas that have been lightly fried until soft.
