Butterflied Leg of Goat

 Borrowed from Getting Your Goat, The Gourmet Guide, by Moore and Stanford.

 You can easily butterfly a leg of goat by slicing down the bone and then  separating the meat from the bone.  Spread the meat open and you are  ready to marinate it. Meat that has been marinated tastes wonderful on  the grill!

For the marinade:  1 cup dry red wine
3/4 cup soy sauce
4 cloves garlic, crushed
1/2 cup crushed mint leaves
2 T. rosemary
1 tsp. oregano
1 T. coarse pepper

Mix all ingredients together in large, shallow pan. Add butterflied  pieces and marinate at least 6 hours, turning the meat twice. Cook to medium rare on the grill.
